Party Food: Chicken Salad

I've been craving Chicken Salad lately, and when a friend recently hosted an informal late afternoon potluck, I thought I'd try out something new - elegant, but not fussy Chicken Salad Bites on Multi-Grain Baguette.
Ingredients:
- 1 whole roasted chicken, cooled and shredded (if you buy a rotisserie chicken from your market, do not add salt later in the recipe)
- 1/2 cup diced cucumber
- 1/2 cup sliced celery
- 1/4 cup minced red onion
- 1 cup whole grapes, sliced in half
- 1/3 cup roasted pepitas
- 1/4 cup mayonnaise
- 1/4 cup buttermilk
- 2 tablespoons honey mustard
- salt & pepper to taste
- 1/4 cup flat leaf parsley, minced
- falt leaf parsley whole leaves (small ones are best)
- sliced multi-grain skinny baguette
Prep your veggies: cut grapes in half; slice the cucumbers into 1/4 rounds, then cut each round into thirds and then thirds again crosswise for consistent cuts.
Evenly mince onion by cutting into it about 1/2" down both lengthwise and crosswise creating a grid, and then (turning the onion on its side) slicing downwards to cut super tiny, perfect minced onion!
